Pumpkin Muffins

Fall is in the air and today was the perfect day for some yummy fall treats. I found an easy and diet friendly recipe. They tasted delicious and everyone loved them.

Pumpkin Muffins


1 box of cake mix (any flavor)
1 egg white
16oz can of pumpkin (if you buy a larger can – freeze the remaining for later use)

Optional: 1 tsp vanilla, 1 tsp cinnamon

Preheat Oven as stated on cake package.

Pumpkin Muffins

Mix all ingredients together.

Pumpkin Muffins

Bake as a cake or muffins. (I made 12 large muffins)

This is a Weight Watcher’s Friendly recipe and equals 2.5 points each.
