Pantry Challenge Week #3 Menu Plan


Can you believe that we are into week three of the Pantry Challenge? I am pleasantly surprised about how well it has gone! We still have plenty of food in the pantry and I stayed under budget last week! Here is a quick run down of my shopping last week:

Food Budget $40:

Kroger: Spent $17.15 on produce, milk, bread

Harris Teeter: Spent $13.24 on cheese, quaker rice snacks, crystal light, bread, yogurt & turkey breast (The fresh Turkey breast was 5lbs on markdown to $3.76 from $11.99!).

Total Spent: $30.39 Under budget!

Dinner Menu

Monday: Turkey Chili (Turkey leftover from Sunday dinner)

Tuesday: Chicken Curry (recipe adapted from Pampered Chef), side salad

1-2 lb Boneless Skinless Chicken, ½” cubes (or used large canned chicken- I have some in the pantry that needs to be used!)
¾ cup Ranch Dressing
1 Tblsp. Lime Juice
1 tsp. Curry Powder
1 garlic clove, pressed
Rice- hot, cooked rice, enough for your family

Cook Chicken until no longer pink. Mix Ranch dressing, lime juice, curry powder and garlic together. Pour dressing over chicken and mix. Serve chicken mixture over hot rice.

Very easy recipe. The ingredients sound odd but it is really yummy! Not too spicy either.

Wednesday: Turkey Pot Pie (Remaining leftover turkey)

Thursday: Leftover night

Friday: Pork Shops in Wine Sauce

Saturday: Boys are on their own! Momma is having a ladies day out! That probably means Macaroni & Cheese or pizza.

Sunday: Butternut Squash Ravioli with Peppered POM Sauce (without the figs)
