Can you believe it is only 4 days until Christmas? I know this snowstorm has thrown many of us off…I know I am behind for sure! Since I have not been able to venture out to a store, I have turned to baking and cooking for last minute gifts! I do a fair share of baking anyways each year.
One experiment for me today was making a substitute for corn syrup. Yep, I am out of corn syrup and cannot get to the store. I found a recipe for Light Corn Syrup Substitute and I gave it a whirl. It is much cheaper than buying corn syrup and some say healthier too (if you can say that sugar is healthier!). Anyways, the recipe worked out fine for my English Toffee.
I will also be making a variety of cookies; Russian Tea Cookies, Sugar Cookies and Snickerdoodles. Chocolate Fudge Cake Loaf is on my list too. I will share my easy recipe with you. It is rich but oh so yummy!
Chocolate Fudge Cake Loaf
1 Chocolate Fudge Cake Mix (you can use any chocolate cake mix)
1 box Chocolate Instant Pudding
1 3/4 cup water
12oz bag chocolate chips
Mix all of the ingredients together in a large bowl. Flour 2 loaf pans and heat your oven to 350 degrees. Divide the batter into the two loaf pans. Bake for about an hour.

I know it is a bit old fashioned making candy and baked goods as gifts. However, I think people really enjoy these treats. My neighbors, friends and co-workers will all be receiving these homemade goods!
