It’s snowing today…in Tennessee…at the end of March! What madness is this!? So because of this cold weather, I was inspired to make this super yummy Low Calorie Healthy Lasagna Recipe! I don’t know what it is about cold weather that makes me crave something filling (and normally fattening). When it comes to healthy eating I’ve learned that you don’t have to give up your favorite foods, you just have to modify them, and decrease your portion size. Looking at the photo above would you guess that a serving of this Low Calorie Healthy Lasagna Recipe was only 287 calories!? Yes! Are you excited to learn how to make this now? Here we go! 

Here is how to make this Low Calorie Healthy Lasagna Recipe:

Here is what you will need:

  • whole wheat lasagna noodles (I used 10)
  • ground turkey (1 lb)
  • Skim milk ricotta cheese (1/2 a cup)
  • cottage cheese (1/2 a cup)
  • 1 onion (chopped)
  • 1 clove garlic (mixed)
  • 1/2 cup spinach
  • 1 cup marinara sauce
  • 1 can crushed tomatoes
  • basil (to taste)
  • Salt and Pepper (to taste)
  • Skim Milk Mozzarella Cheese (1/2 cup shredded)

First: You want to boil your noodles according to package directions. Drain and run over cold water to keep from sticking!

Next: You will build your sauce! In a sauce pan cook and drain your turkey meat, add in your onion, garlic, sauce,crushed tomatoes,  spinach, basil, and salt and pepper, let simmer about 10 mins or until your spinach is cooked down. Take off heat.

Then: Now we are going to build your cheese filling. Mix in your ricotta cheese, cottage cheese, and basil together. Yum!

Last: Preheat your oven to 375 degrees and grab a greased 9×13 pan. Layer 1/2 your meat sauce on the bottom of the pan, then put down a layer of noodles, then a layer of cheese, and another layer of noodles, add the remaining of your sauce on top, and sprinkle with cheese. Cover with foil and cook for 30 mins. Take it out and add some more shredded cheese and cook uncovered about 5 more mins. Serve hot and bubbly!

Ingredients

Instructions

  1. First, cook your noodles according to package instructions, drain and run under cold water.
  2. Cook your ground turkey and drain, put back in saucepan and add sauce, crushed tomatoes, garlic, onion,spinach, and salt and pepper. Cook for 10 mins or until spinach is wilted.
  3. For your cheese filling add together your ricotta and cottage cheese, and add in some basil to taste, mix well.
  4. Preheat oven to 375 and grease a 9x13 pan.
  5. Start layering your pasta by first putting a layer of sauce down (about 1/2), then a layer of noodles, then a layer of cheese, another layer of noodles, then sauce and shredded cheese.
  6. Cook for 30 mins covered, and then take out, sprinkle with more cheese and cook 5 more mins or until cheese is bubbly.
