Great Game Cooking Wild Game Recipes – Venison Recipes

Once meat is properly processed you need to use these steps to make great venison recipes!

After processing meat properly, the next important step in learning to cook great game is do NOT overcook. If you eat grass- fed beef then you probably already know alot of the tips to follow! Venison is normally “grass fed”  so cooking the meat will be similar to grass-fed beef.  Meat continues to cook after being removed from heat so you need to slightly UNDERcook then allow the meat to “sit” briefly before slicing and eating.

Don’t trim off the little fat that is on venison. It helps keep the meat moist. Trim it after cooking. If your meat is trimmed closely use slow cooking methods. Crock pots or dutch ovens packed with vegetables and a couple of cups of water are excellent ways to slow cook. As with any really lean meat though, if you over cook, it will be stringy and tough.

Marinade the meat if you know the deer was older, running or very lean.  The marinade will help tenderize the meat prior to using your favorite venison recipes.  A few common marinades for venison include buttermilk (particularly good for venison tenderloin before frying),  extra virgin olive oil and vinegar with Worcestershire sauce,  or italian dressing.

Add strong flavors: spices and tomatoes are excellent flavors in cooking venison.

Try venison tenderloin battered and fried or cubed in beef stew.

Venison recipes for roast: Use recipes for roast just as you would a beef roast but add a bit of fat.  When we cook a roast in the crock we pour just a bit of extra virgin olive oil over the top of the roast then add the regular seasonings such as a pack of Lipton Onion soup or use a recipe such as this pot roast recipe.  Crock pot recipes are great for Cooking With Kids- How to series 5.

When I cook ground venison I use a colander inside a pie plate in the microwave.  I cook until the meat is just slightly pink and then add to the recipe for the last of the cooking to avoid overcooking the meat!! Try ground venison in dishes that have multiple spices and particularly tomato ingredients such as : Spaghetti, Game day chili or Crockpot Chili ,  Tacos, Spicy Mexican Minestrone  soup
