Gluten Free Pumpkin Waffles Recipe
In the last couple of weeks, we have found out that my husband is gluten intolerant. I have been scrambling to make breakfasts that I can cook ahead of time and freeze. I have to come up with meals that my kids and my husband will both like and they have to be easy. They have to be something I can make ahead of time. I headed into Walmart to buy some ingredients for what I hoped would be a special breakfast meal idea. I decided that a pumpkin waffle with yogurt sauce would be the perfect remedy. I will say my children loved the Yogurt dipping sauce so much that they asked me to put the rest in their lunch box with apple slices. This recipe was so successful in my home that I am sharing it with you.
The waffles were also a huge hit. I was able to make some for the morning and freeze some for breakfast in my future. You know the one that you are running late, and you need something quick. These easy recipes will bring fall to your table and joy to your stomach.
How to make this Gluten Free Pumpkin Waffles Recipe
Gluten Free Pumpkin Waffle Recipe Ingredients:
Wet
¾ cup pumpkin puree (do not use pumpkin pie mix)
2 eggs
1 tablespoon coconut oil, room temperature
2 tablespoons real maple syrup
1/4 tsp of vanilla
1 cup yogurt
Dry
1.5 cups gluten-free all-purpose flour
2 teaspoons pumpkin pie spice
2 teaspoons baking powder
½ teaspoon baking soda
Yogurt dipping sauce ingredients:
1 cup of Yoplait Greek yogurt
2 TBS of real Maple Syrup or any type works
1/4 TSP of pumpkin spice
Gluten Free Pumpkin Waffle Recipe Instructions:
Spray your waffle iron with a non-stick cooking spray.
Begin by preheating your waffle iron to medium.
Next, in a large bowl, mix together the wet ingredients.
Then, add in dry ingredients and stir until combined.
Once waffle maker is completely heated pour about ½ cups of batter onto waffle maker
Let the batter cook for about 1 and ½ to 2 minutes. Then check every 20 seconds or so until it is done. The waffle will have a crispy outer layer.
Use non-stick tongs to remove waffle from iron.
Leave them to cool on a plate
