Ingredients:

  • 2 lbs lamb stew meat, cubed
  • 4 cups potatoes, peeled and diced
  • 2 cups carrots, sliced
  • 2 cups onions, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour (for coating the meat)
  • 2 tablespoons olive oil

Instructions:

Prepare the Meat:

In a bowl, toss the lamb stew meat with flour, salt, and pepper until evenly coated.

Sear the Meat:

Heat olive oil in a skillet over medium-high heat. Brown the meat on all sides to enhance the flavor. Transfer the seared meat to the crockpot.

Add Vegetables:

Place the potatoes, carrots, onions, and garlic in the crockpot with the seared meat.

Create the Broth:

In a separate bowl, whisk together the beef broth, red wine (if using), tomato paste, thyme, rosemary, salt, and pepper. Pour the mixture over the meat and vegetables in the crockpot.

Cook Low and Slow:

Set the crockpot to low and let it cook for 7-8 hours or until the meat is fork-tender and the vegetables are cooked to perfection.

Freezer Tips:

Allow the stew to cool completely before freezing. Portion it into airtight containers or resealable freezer bags, leaving some space for expansion. Label with the date and contents for easy identification. Frozen Irish stew can be stored for up to 3 months.

Reheating Instructions:

Thaw the frozen stew in the refrigerator overnight. Reheat on the stovetop over medium heat, stirring occasionally, or in the microwave until heated through. Ensure it reaches an internal temperature of 165°F (74°C).

Serve and Enjoy:

Ladle the warm and comforting Irish stew into bowls. Garnish with fresh parsley if desired. Serve with crusty bread for the ultimate cozy experience.
