Creamy Root Vegetable Chowder Recipe

So why Root Vegetable Chowder? It seems easy and filling. I am always looking for a way to get my children to eat their veggies. I am also trying to use things I have on hand. This seems like a super way to use white potatoes. I always buy the big bag and then can’t come up with anything to do with them other than make baked potatoes. What do you do with your massive amounts of white potatoes?

Creamy Root Vegetable Chowder Recipe

  • 2 tablespoons butter
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 1 medium parsnip, peeled and diced into 1/2-inch pieces
  • 2 medium white-skinned potatoes, peeled and diced into 1/2-inch pieces
  • 1/2 pound carrots, sliced into 1/2-inch slices
  • 2 bay leaves, fresh or dried
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground thyme
  • Salt and pepper to taste
  • 2 tablespoons flour
  • 2 boxes vegetable stock (14 ounces each)
  • 2 cups heavy cream or half and half
Preparation

Heat a deep pot over medium heat.  Melt butter into oil.  Add onion, parsnip, potatoes, carrots and bay leaves.  Stir to coat vegetables and season with nutmeg, thyme, and salt and pepper.  Sprinkle with flour and cook, 2 minutes.  Whisk in broth.  Bring soup to a boil, cover and simmer, 15 minutes, until all veggies are tender.  Uncover, stir in cream or half and half and heat through.  Serve piping hot.

  1. I have a super quick dinner idea for using up potatoes. I make chorizo con papas, which basically you dice up potatoes, boil them till they just start to become tender. Meanwhile fry up a tube of chorizo(walmart sells a 12oz tube for $0.98) with some chopped onion. Then mix in the potatoes and let fry/cook a little longer. this stuff makes a great filling for soft tacos or burritos. I’ve even used leftovers for taco salad instead of using ground beef. And its really inexpensive! We actually had this for dinner tonight.
