Cranberry Pineapple Relish Recipe
Growing up the only time I had Cranberry Sauce was at holidays and then it was always from a can. As an adult I tasted a delicious Cranberry Pineapple Relish Recipe while dining out. I always thought about it around the holidays but always got wrapped up in other things and never got around to trying to recreate that delectable dish. This holiday season I actually got as far as buying the cranberries. When Christmas came and went and the cranberries sat in my fridge, I decided to freeze them for when the mood hit me to create the dish. Cranberries were long forgotten when my son stumbled upon a can of Cranberry Sauce while helping me cook dinner the other night.
He asked if we could open it for dinner and I told him that we could do one better. I sent him downstairs for the bag of cranberries I had frozen and we began recreating the tasty Cranberry Pineapple Relish Recipe I remembered. We had just started when my daughter came in begging to get involved in the action and we had such a blast creating and tasting as we went along. There are so many different things to do with this recipe that each of us took a task and we had it completed before dinner was even done cooking.
Delicious Cranberry Pineapple Relish Recipe
Cranberry Pineapple Relish Recipe
Ingredients
- 3 cups fresh cranberries
- 2 clementines
- 1 lemon
- 2 cans of pineapple chunks drained
- 2 Tbsp Honey
- 1 1/2 Tbsp Brown Sugar
Instructions
- Grate clementines and lemon in a small bowl
- Mix Zest together and save for later.
- Slice clementines and lemon in half and cut out the orange segments from the membrane.
- Place in a second bowl.
- Repeat with 1/2 the lemon. (Save the other 1/2 for another recipe)
- Squeeze juice from the lemon and clementines in with the orange and lemon pieces.
- Add zest to orange and lemon pieces and set aside.
- In a Food Processor or mini bullet mixer, pulse 1/2 of the cranberries until they are finely chopped.
- Place in Medium bowl and repeat with remaining half but pulse for a shorter time so they are not as fine and are slightly larger pieces.
- Add the second batch of cranberries to the 1st batch.
- Mix in the bowl of citrus.
- Add Pineapple and stir until completely mixed.
- Finally stir in honey and brown sugar until completely coated.
- Refrigerate until ready to serve.
My husband tasted our Cranberry Pineapple Relish Recipe and said it was the best he had tasted hands down. We were all very proud of our creation and there was barely any leftovers. I have one more bag of frozen cranberries and think this will make a delicious topping for ice cream if the pineapples are pureed with the cranberries so I am thinking we might just have to whip this up next weekend for company.
