Do you know what says summer to me? Anything citrus! I love to use lemons in my cooking during the summer, and this week I decided it was time to breaking out my recipe for classic iced lemon bread. It’s easy to make and tastes just like summer! It’s one of my daughters personal favorites and she was home to help me make it. (You can thank her for the sprinkles in the icing, ha!). I thought someone else out there must share my love for lemons in the summer so I wanted to share this classic iced lemon bread recipe with those of you! Let’s check it out:

Here is how to make my Classic Iced Lemon Bread Recipe:

You Will Need:

3 cups flour
1 1/2 cups sugar
4 eggs
2/3 cups butter (softened)
1 1/2 tsp salt
3 tbsp lemon juice
2 tbsp lemon zest
2 tsp baking poweder
1/2 tsp vanilla
1 cup milk

For the Icing:

1/2 cup lemon juice
1/2 cup powdered sugar
Sprinkles if your heart so desires

Step 1: Preheat your oven to 350 degrees. Grease 2 loaf pans.

Step 2: In a bowl mix your butter and sugar together until smooth.Then combine your lemon juice, zest, eggs, and vanilla and mix until combined.

Step 3: In another bowl add your flour, baking powder, and salt. Mix until well blended. Add in your milk and mix.

Step 4: Add your egg mixture in with your flour mixture and mix well. Make sure your batter is smooth and fluffy.

Step 5: Pour your batter into your loaf pans and bake for 30-35 minutes or until a fork comes out cleanly when poked into the center.

Step 6: Let bread cool. Mix together your sugar and lemon juice to make an icing. Add icing, cut, and enjoy!
