Quick Chicken Pot Pie

Kids gone back to school yet? Need a quick and easy recipe that the whole family will enjoy?

The reason I love this Quick Chicken Pot Pie recipe is because it is quick, easy, taste amazing and I usually keep most of these ingredients on hand all the time. I can throw this recipe together in about 30 minutes and enjoy more time with my family! I usually double this recipe and make two pies and I freeze the other for a night that I’m really in a rush or if a friend is in need!

Here is a list of the few ingredients you will need!

     8oz cream cheese, cubed

     ½ c chicken broth

1 can chicken (I use leftover chicken from a rotisserie chicken)

Can or bag mixed veggies – I also like to add a small can of chopped potatoes!

1 packet Good Seasoning Italian Dressing Mix or about 1 tablespoon of your favorite seasoning I love using Spike (no salt added)

1 refrigerated pie crust – I love to use the deep dish pie crust!

Directions-

     1st: Preheat oven to 425.

2nd: Cook cream cheese and broth until cream cheese is melted, stir often.

3rd: Mix with chicken, veggies, and seasoning.

4th: Spoon into a pie plate.

5th: cover with pie crust, seal edges, and cut slits in crust.

Finally: Bake 20-25 min.

This is the most important tip! Wait about 10 minutes before cutting into the pie before serving! It will thicken inside and makes serving so much easier!
