I have to tell you that last week I hardly cooked at all! Do you ever have one of those weeks when you are not motivated to cook at all? That was me last week! I am embarrassed to tell you we had frozen pizza one night, take out fried chicken another and Amee cooked for me one night too! This week, I need to get with the program! Menu Plan for the Week & Roasted Whole Chicken

Have you ever baked a whole chicken? It is really easy and it may provide enough meat for several meals for a small family. I usually cook my whole chicken in the crock-pot. Today I tried roasting it in the oven with fabulous results! Menu Plan & Pantry Challenge Follow Up

Since the completion of the Pantry Challenge, I have meant to tell you all a few things. Life has been busy! A full two weeks later, I am ready to give you all my thoughts! Freezer Cooking: Butternut Squash, Beans & Banana Muffins

Can you believe it is the end of January and the Pantry Challenge is over? For the most part, it went really well for me. I was nervous and apprehensive when starting on the pantry challenge journey. Can you believe that we are into week three of the Pantry Challenge? I am pleasantly surprised about how well it has gone! We still have plenty of food in the pantry and I stayed under budget last week! Pantry Challenge Progress Report

It is the second week of the pantry challenge. How are you all doing? Are you sticking to your "rules"? To my surprise, this has been easier than I thought. What has really helped me is the menu planning. Although I did not strictly follow the menu plan last week (over sleeping will do that!), it was a huge stress relief to know that a plan was in place. Pantry Challenge Week 2: Menu Plan

Last week I shared my first attempt at menu planning.  Having the meals planned out was very helpful and a time saver. Now, my plan did not go smoothly. Wednesday morning I overslept- which meant I had no time to get the pork roast in the crock pot! It wasn't a big deal though; I just moved the Pulled Pork Sandwiches to Thursday.
