Working outside the home entails thinking about what I”ll bring for lunch every day. It”s too expensive and definitely not in our budget to order out every day. The challenge is to create some variety in what I have to eat each day. Tuna or ham sandwiches day after day just don”t cut it. Leftovers are great once or twice a week but I prefer not to eat the same thing for lunch as I had for supper the night before.
For years, we have always kept at least a few Michelina”s entrees in the freezer. They are low priced, reasonably sized frozen meals which taste good. When we had teenagers in the house, they were a necessity for afternoon and late night snacking. Most times, Mom never had an opportunity to try any of these entrees as they were quickly devoured by the teens.
Recently, I found Michelina”s has a webpage entitled Make It Your Michelina’s complete with loads of ideas of how to dress up Michelina”s frozen entrees and snacks. Some of the ideas I plan to try include:
I think I might switch the lettuce wraps up a bit and try them in a tortilla with a little extra cheese or even some sour cream.
This one could easily be varied by adding grilled chicken or even leftover ham to the alfredo noodles.
These taco bowls would stand up to a little sour cream, salsa and maybe even some black olives.
I never would have thought to take an inexpensive, yet tasty, frozen Michelina”s meal and turn it into an interesting and, most importantly, not boring lunch. These recipes are just a springboard to the lunch ideas I plan to cook up over the next few weeks.
