Acai Chicken Wrap

After eating a wrap at a local chain restaurant, I had to come home and try to make this myself.  The Acai Chicken Wrap recipe is one that is simple to prepare and nice to make a day (or at least a few hours) ahead of time.  The longer the flavors can mingle, the better it will taste.  I made it into a wrap, but you can also use this as a salad.  Makes a great, light and healthy lunch option!

Acai Chicken Wrap Recipe 

Acai Chicken Wrap


  • 2 Boneless, skinless chicken breasts
  • 1 tablespoon Mrs. Dash Garlic & Herb
  • 1/2 cup Acai juice (or juice blend)
  • 3 tablespoons Granulated sugar
  • 3 tablespoons Rice vinegar
  • 1 1/2 tablespoon Light/mild extra virgin olive oil
  • 2 tablespoons Lemon juice (Can substitute orange juice)
  • 1/2 cup Craisins
  • 1/2 cup Roasted & salted pumpkin & sunflower seed mix (or 1/4 c. of each, respectfully)
  • 1/4 cup Grape tomatoes, quartered
  • 1/2 cup Seedless cucumber, cubed
  • 1 pinch Freshly ground black pepper
  • 4 Italian Herb or Spinach wraps
  • 1/4 cup Fresh spinach leaves


  1. Bring a large pot of water to a boil and add chicken and Mrs. Dash. Cook until done, approximately 20 minutes. Check internal temp with a meat thermometer if unsure.
  2. Remove chicken from water and let cool while you prepare the dressing.
  3. In a small bowl, combine Acai juice, sugar, vinegar, olive oil, lemon juice and stir until dissolved.
  4. Add craisins, seeds, tomatoes, cucumber, pepper and chicken to dressing and mix well.
  5. Begin to assemble the wrap with spinach leaves, then spoon on chicken mixture. Fold the wrap & enjoy!
  6. Makes 3-4 wraps.
