I’m joining Amee on the $5 dinner kick this month cooking our Wednesday meals from Erin Chase’s $5 Dinner MOM Cookbook.. You can join us too! Amee loaned me her copy this weekend and my daughter, Missy, and I spent some time deciding which recipes to try over the next two weeks. We gravitated to the seafood recipes and decided to try the Shrimp Scampi. I’ll admit our decision was based on the fact I already had all the ingredients in my stockpile.
Here are the ingredients I used:
1 lb. jumbo frozen raw shrimp (21-30 ct) – $5.00
4 tbsp. butter – $0.25
4 garlic cloves – $0.14
2 tbsp. olive oil – $0.10
¼ cup shredded parmesan cheese – $.41
Salt & pepper
Frozen green beans – $0.50
Total = $6.40
The cost of the meal was around $6.40 because I chose to use a pound of shrimp instead of the half pound called for in the recipe. If I used the listed half pound of shrimp (per the recipe), the cost of the meal would have been only $3.90!
The recipe was fast, easy and delicious! I’ve never been one to follow a recipe to the letter. I guess that’s why I don’t bake. Baking requires measuring and following a recipe precisely. I don’t measure ingredients … I dump ingredients. Hence, the reason why my husband calls my cooking “dump cooking”, taking any ingredients at hand and turning them into a meal. I adjusted the Shrimp Scampi recipe substituting linguine for spaghetti and using twice as much shrimp, garlic and butter as was called for in the recipe.

Erin provides great tools for strategic shopping, meal planning and coupon shopping in the introductory chapters of the cookbook. I, personally, employ many of these strategies with the exception of meal planning. I just haven’t nailed that one down yet!
